Description

Easy baked donuts inspired by classic Italian Easter Cookies are the perfect morning treat. They look like spring and taste like fluffy versions of the classic cookie.


Ingredients

Donuts

  • 1 cup all purpose flour
  • 1/3 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 Tbsp unsalted butter, melted and slightly cooled
  • 1 egg
  • 1/3 cup + 1 1/2 Tbsp milk
  • 1 tsp vanilla

Icing

  • 1 cup powdered sugar
  • 4 tsp water
  • 1 tsp lemon juice
  • 1/8 tsp (a drop) of Fiori di Sicilia
  • Sprinkles of your choice
  • food coloring, optional

Instructions

  1. Preheat the oven to 350 degrees F. Spray a donut pan for six donuts and set aside.
  2. In a medium bowl, whisk together the dry ingredients. Add the wet ingredients to the mixture and and whisk to combine.
  3. Using a piping bag with a large tip or a ziploc bag with the corner cut off, pipe the batter into the donut pan.
  4. Bake 8-10 minutes until the donuts spring back to your touch.
  5. Cool the donuts in the pan on a wire rack. Once cool enough to touch turn out onto the rack and let cool completely.
  6. Once the donuts are cool prepare the icing. In a small saucepan combine the powdered sugar, water, and lemon juice. Cook over medium heat until warmed through.
  7. Remove from the heat and stir in the Fiori di Sicilia and the food coloring if using it.
  8. Work quickly to spoon the icing onto the donuts as the icing sets up. Top with sprinkles while the icing is still soft.
  9. Enjoy!

Notes

Icing and sprinkles is best as a two person job so someone can add sprinkles before the icing sets. This is a perfect job for the kids.

If you dont’ have Fiori di Sicilia you can use vanilla instead, but you won’t have the citrus flavor. You could always add a little orange zest with the vanilla to mimic the flavor.
