Irish Cheddar Soda Scones

Description

Super easy Irish soda bread gets turned into cheddar scones perfect for any time of day. These are great warm and spread with butter or paired with a hearty meal such as stew. Or try them as part of a traditional Irish breakfast spread.


Ingredients

  • 1 1/2 cup all-purpose flour
  • 1 1/2 cup whole wheat flour
  • 1 Tbsp granulated sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 cup shredded Irish cheddar cheese
  • 1 1/2 cup buttermilk

Instructions

  1. Preheat the oven to 425 degrees F and place a rack in the center of the oven. Line a baking sheet with parchment paper and set aside.
  2. In a large bowl, whisk together the flour, sugar, baking soda and salt.
  3. Add the cheddar cheese and toss to coat in the flour mixture.
  4. Add the buttermilk to the dry ingredients and stir until a soft, moist dough is formed.
  5. Split the dough into eight portions and drop into rounds on the prepared baking sheet.
  6. Brush the tops with buttermilk and dust with a little extra flour.
  7. Bake scones for 18-20 minutes or until they are golden brown.
  8. Remove from the oven and let cool slightly before serving with butter and jam.
