One of the things I can remember both of my grandmother’s making is banana bread. Both made it a little differently, but each was delicious in its own way. In fact, banana bread was one of the first things I was brave enough to tackle making on my own because I had seen it made so many times.

A few year’s ago my aunts made a collection of my grandmother’s favorite recipes and gave everyone a copy. Among the many recipes bringing back pleasant childhood memories was her banana bread recipe. So using this as a starting point I have adapted it over the years to create a peanut butter banana bread that my own family can build memories around.

Peanut Butter Banana Bread

Description

This peanut butter banana bread isn’t as sweet as my grandmother’s version, but just sweet enough with brown sugar and honey balancing out the natural sweetness of the ripe bananas. Serve it with a smear of peanut butter or another favorite nut butter. 


Ingredients

  • 3 medium ripe bananas, mashed
  • 1/4 cup butter, melted and cooled
  • 1/4 cup natural peanut butter
  • 1/2 cup packed brown sugar
  • 1/4 cup honey
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups whole wheat flour
  • 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

Instructions

  1. Preheat the oven to 325 degrees F. Spray a loaf pan with cooking spray and set aside. 
  2. In a medium bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside. 
  3. In a large bowl or stand mixer bowl, mash the bananas with a fork. Add the melted butter, peanut butter, brown sugar, and honey. Mix to combine. 
  4. Add the eggs and vanilla. Beat until combined. 
  5. Mix the dry ingredients into the banana mixture and stir just until combined. 
  6. Pour batter into the prepared loaf pan. 
  7. Bake for 55 – 65 minutes. Start checking at 50 minutes and rotate the pan if needed. 
  8. Test for doneness. When a toothpick inserted comes out clean you are done. 
  9. Let cool in pan for 10 minutes before removing to a wire rack to cool completely.
  10. Slice and enjoy! 

Notes

I like to keep my bananas chunkier so you can see pieces of banana in the finished bread. 

Craving banana bread, but don’t have overripe bananas? Place your bananas in a paper bag with the top folded down loosely. Check the bananas in 12 to 24 hours for ripeness.
