We’re digging into dessert together this holiday season 🎄 As promised, our Chocolate Chip Peanut Butter Oatmeal Cookie Skillet 🍪 a mouthful of a name, but you’ll be more worried about the mouthful of gooey delicious cookie once you take a bite. What you need: - 1 1/2 cups almond flour - 1 1/2 cups old fashioned oats - 1 1/2 tsp baking soda - 1/2 tsp salt - 1/2 cup maple syrup (use the real stuff) - 1/2 cup coconut sugar - 1/4 cup natural peanut butter - 1/4 cup avocado or coconut oil - 2 tsp vanilla - 1 cup @lilys_sweets dark chocolate chips - 5 (or more) @lilys_sweets dark chocolate peanut butter cups What you do: - Preheat the oven to 350 degrees F - In a mixing bowl combine all your dry ingredients (almond flour through salt) first. Then add the rest of the ingredients, except the chocolate. - Stir until combined. Add the chocolate chips and gently stir to evenly distribute. - Pour your dough into a 10 inch cast iron skillet or other oven safe skillet. Spread it out to reach the edges. - Bake 8-9 minutes, depending on how gooey you want it 😊 - Remove from oven to a cooling rack. Carefully and gently place peanut butter cups on warm cookie. Let it set for 5-10 minutes. Scoop and enjoy or eat straight from the skillet (we won’t judge). Top it with chocolate, peanut butter, ice cream . . . I debated on posting, but feel it is important to share. I feel blessed to be able to travel with my kids. To show them new places and share experiences with them. It has helped make them more flexible, inquisitive, and understanding. In the age of covid it has been an interesting experience. We put off travel for most of the year. Once we decided to hit the road we have done our part to protect ourselves and those around us - masks, hand sanitizer and lots of hand washing, and plenty of social distancing. Even if you don’t currently feel comfortable traveling I hope that you keep exploring through books, online museum tours, and trying cuisines you might not be that familiar with.
